If you are a beginner you may start learning to make dosa on a non-stick griddle. In India traditionally a cast iron tawa (ex: like a lodge 10.5”griddle) is used to make dosas. This kind of tawa has low edges like a griddle which makes spreading easier. A pan with high edges won’t let you spread the batter well.
